An edible substrate has an image formed from a dispersed pigment ink that can be , applied by a drop-on-demand ink-jet printer. The ink has at least 3% by weight of a , food-grade white pigment, consisting of titanium dioxide aluminum hydroxide, calcium carbonate or talc. It also has between 1 and about 48 weight percent an , edible dispersant, between about 10 and about 25 weight percent of an edible alcohol and from about 30 to about 75 percent by weight water. The composition is , substantially free from shellac and polymeric binder.
