Abstract From the Canadian patent

An ice-containing product is provided which comprises at -18~C (i) a first , population of frozen particles which first population consists essentially of frozen edible particles, or a mixture of frozen edible particles and ice particles, having a particle size of greater than 0.5 mm; and (ii) a second population of ice particles having a mean particle size such that the ratio of the mean particle size for the first population to the mean particle size for the second population is greater than 10 and less than 100 wherein the ratio , of the weight of the first population of particles to the weight of the second population is from 2:3 to 9:1 and the first population and second …
