The invention relates to a structured mixed phase that results from the incorporation of a biological macromolecule into a liquid-crystal preferably , lamellar, amphiphile phase characterised in that the proportion of said biological macromolecule in said structured mixed phase is at least 5 wt. % in relation to the amphiphile compounds making up the liquid-crystal amphiphile phase and in that at least one of the two entities constituted by the biological macromolecule and the group of amphiphile compounds has no charge.
