A raw fresh alimentary paste and pasta product is provided having an extended shelf-life under refrigeration and a method for manufacturing same. The raw fresh alimentary paste comprises flour an aqueous dough-forming agent and , water activity reducing agent in sufficient amount to impart to the pasta stability against microbial growth, product spoilage and chemical decomposition without gelatinisation when stored at refrigeration temperatures in an oxygen reduced environment.
