A filter cartridge adapted to be mounted in an exhaust hood for the removal of grease and particulates from cooking air comprises high velocity air intake openings, interior baffles, and an exit baffle adapted to be adjusted to control, the air intake velocity. The filter cartridge may comprise a grease remover a, grease director, a capture baffle, and a grease chamber enclosure. Banks of filter, cartridges may be employed in an exhaust hood.
