Abstract From the Canadian patent

A process for producing phases enriched with 1,1-GPM (1-O-.alpha.-D-Glucopyranosyl-D-mannite) and/or 1,6-GPS (6-O-.alpha.-D- Glucopyranosyl-D-sorbite), from hydrogenated isomaltulose or mixtures containing hydrogenated isomaltulose. The latter is dissolved in water at an elevated temperature the resulting solution is crystallized by cooling the solution over a predetermined temperature range sufficient to obtain the desired phase composition and the phase, enriched with 1,1-GPM is subsequently separated from the phase enriched with 1,6-GPS.
