Compositions comprising cocoa, sweetener a combination of food-grade, enzymes, and optionally chocolate liquor are described. The compositions provide a cocoa/chocolate liquor flavored syrup having a high concentration of the flavoring in, part due to the substantially higher usage of cocoa and liquor than previous syrups. Additionally the compositions have excellent flow properties for use in beverages and confections, while further having a low water activity which leads to a longer and more commercially useful shelf life. Some compositions will also contain an acidulant a mold, inhibitor, and vanilla flavor.

Why it's free to use
- Filed September 12, 1997. No grant is recorded for it in Canada; had it been granted, its 20-year term would have ended September 12, 2017.
- A certificate of supplementary protection adds at most two years for a drug, so even that would have ended by September 12, 2019.
- We check Canadian rights only. A patent in its family in another country could still be in force: check its family on Google Patents.
