Sausages are produced by co-extruding a uniform layer of acid collagen gel around an extruded edible meat product and, chemically coagulating the co-extruded gel is a bath containing a chemical coagulating agent, such as to provide a collagen casing of sufficient mechanical strength to allow mechanical formation of sausage links by twist-linking or crimping. Preferably a coagulating agent such as liquid smoke is included in the collagen gel prior to extrusion. The coagulating bath may comprise a dehydrating agent such as alkali or a salt solution. No expensive air drying step is required in order to produce continuous casings of good strength.

Why it's free to use
- Filed December 23, 1992 and granted November 18, 2003. A Canadian patent filed from October 1, 1989 lasts 20 years from filing, so its term ended December 23, 2012.
- A certificate of supplementary protection adds at most two years for a drug, so even that would have ended by December 23, 2014.
- We check Canadian rights only. A patent in its family in another country could still be in force: check its family on Google Patents.
