The present invention concerns a process for the preparation of cooked cereals in which a mixture comprising a raw material chosen from the group consisting of starchy substances and soya, and water, is processed by heat this, mixture is introduced into an extruder at the same time as a raw material also chosen from the group consisting of starchy substances and soya, and then the mixture thus obtained is extruded.
