The present invention relates to an apparatus and a method for determining the water content of an oil-in-water emulsion. The apparatus includes a first sensor for measuring the real part of specific admittance of the emulsion, a second sensor which acts as a temperature compensation device and electronic circuitry for producing a signal representative of the water content of the emulsion.
