The invention relates to a process for the production of granules of a food base for sauces and soups from an amylaceous material and a fat, in which the fat is melted and the amylaceous material and the molten fat are mixed the mixture is extruded in the form of strands the strands, are hardened by cooling and are subdivided into sections and the strand sections are size-reduced to granules by projection through a grill, and to an apparatus for carrying out this process.
