Abstract From the Canadian patent

A method of pre-tenderising meat is provided which involves stunning an animal (1) with a mechanical stunning pistol (6) to cause brain death infusing a, proteolytic enzyme (such as papain bromelain or ficin for example) into the animal under gravity with a syringe (7) whilst the animal's heart is still beating and then bleeding the animal in order to stop the heart beating after a suitable time has elapsed for the enzyme to be distributed within the vascular system of the animal. The enzyme can be infused more easily when the animal is in a prone position, and the process is faster and more humane than prior art processes in which the enzyme was injected into the conscious animal.

Why it's free to use

  • Filed July 29, 1991. No grant is recorded for it in Canada; had it been granted, its 20-year term would have ended July 29, 2011.
  • A certificate of supplementary protection adds at most two years for a drug, so even that would have ended by July 29, 2013.
  • We check Canadian rights only. A patent in its family in another country could still be in force: check its family on Google Patents.
