A method of determining properties of meat by measuring light reflective properties thereof. The method comprises measuring reflective values at various points along a scanning line using, for example, an optical probe inserted into the meat which can measure light in different wavelength regions or different discrete wavelengths. The output measurements from the probe are obtained as a series of whole numbers and a determination is made as to the number of occurrences of each whole number. The values thus obtained are used as variables to calculate the value for the property of the meat.

Why it's free to use
- Filed February 27, 1991. No grant is recorded for it in Canada; had it been granted, its 20-year term would have ended February 27, 2011.
- A certificate of supplementary protection adds at most two years for a drug, so even that would have ended by February 27, 2013.
- We check Canadian rights only. A patent in its family in another country could still be in force: check its family on Google Patents.
