Abstract From the Canadian patent

Crystallizing anhydrous fructose by preparing an aqueous solution containing at least about 90% dry substance the fructose content of the dry substance being at least about 90% by weight; seeding the aqueous solution at a temperature of 50-60°C; and cooling the resulting mass at a controlled rate and with continuous mixing such that the supersaturation of the liquid solution with respect to saturated fructose is less than a ratio of about 1.25 and the temperature difference between the warmest and coolest portions of said solution is no more than about 6°C.
