Method for photometric determination of the concentration of a substance of individual pieces of meat, such as the pigment and protein content of meat, by which the optical properties of the meat are measured by means of an optical probe and the obtained results are put into an algorithm. The method comprises the steps of registration of the optical values ina series of different wavelengths e.g. 32, which comprises a continuous, wavelength range or a spectrum insertion of the obtained values as, variables in a multi-variable algorithm and calculation of the concentration value.
