The invention concerns a process for producing bleached plant pulp extracts using H202 in an alkaline aqueous solution. The process involves successively treating the pulp in an acidic medium for at least 10 minutes at a pH of 2.5 at the most washing the pulp thus treated, with at least 80% efficiency and exposing the washed pulp to the action of the H2O2 in the presence of an H202 stabilizer. This process makes flour that was formerly not used because of its too-dark colour useable in industrial food production.
