A process for preparing a yeast extract by extracting RNA and extract components from RNA-rich yeast cells, decomposing the RNA into, nucleotides with 5'-phosphodiesterase and further, treating the same with deaminase if desired. In, this process, viable yeast cells extremely rich in RNA, namely Candida utilis CS-7529 (FERM BP-1656) or Candida utilis CSB-6316 (FERM BP-1657) are employed, as the yeast cells, and, an aqueous solution containing said viable yeast cells is preliminarily heated to 80 to 120 °C prior to the decomposition of the RNA into nucleotides.
