The present invention provides a hybridoma cell line which produces monoclonal antibodies directed against omega gliadin protein of wheat and related proteins in rye and barley. The inventive monoclonal antibody can be used in a number of improved methods for the detection and quantification of gluten in foods and other substances. The invention has important applications in monitoring the levels of cereal incorporated into processed meat and as an analytical method for deletion of cereal protein.
