Abstract of the Disclosure, The present invention is an emulsifier system for cookies comprising:, a) from about 40% to about 100% (by weight on the, basis of monoglyceride content) fatty acid mono-diglycerides, said mono-diglycerides having from about 35% to about 99% fatty acid monoglycerides, and from about 1% to about 50% fatty acid diglycerides, wherein at least about 65% of said fatty acids are selected from the group consisting of C14-C20 saturatecl fatty acids and C16-C20 trans-unsaturated fatty acids and mixtures thereof; b) from about 0% to about 60% (by weight) fatty acid esters of polyols having an average of from about 4 to about 14 hydroxyl groups, wherein from about 10% to …
