The disclosure describes a smooth surfaced collagen casing having a tubular structure comprising two hardened concentric layers united with one another. Each of the layers possesses a plurality of collagen ropes oriented in a direction opposite to the ropes in the other of said layers. The products of the invention, after suitable finishing treatments are par-, ticularly adapted to be utilized as an edible casing for fresh pork sausage which must be cooked before they are consumed as, well as sausages of the weiner or frankfurter type.
