Abstract From the Canadian patent

The disclosure describes a method for producing bread, which comprises kneading a dough together with (a) an L-ascorbic acid and (b) an additive selected from divalent carboxylic acids having the general formula (1), and salts thereof wherein, n is 0 or 1 X denotes a hydrogen, atom, an amino group or a hydroxyl group and each of Z and Z', is a hydrogen atom; or Z and X and/or Z' and Y represent in a combined form, an oxygen atom; cystine methionine, alums and, nicotinic acids allowing the thus kneaded dough to ferment and then baking the thus fermented dough.
