A method and apparatus for forming a proteinaceous mass into a fibrous and layered structure including, imparting a gross fibrous structure to the mass by passing the mass through a belical conveyor and layering the fibrous structure by extruding the same through a slot and into an opening, the compression and extrusion being carried out at elevated temperature to heat set the mass.
