A warm coffee extract is applied onto a freezing surface in a plurality of layers until a desired thickness is obtained. Thus applied, there is continual melting and refreezing of the extract. This permits the formation of large ice crystals whereby the finished product is darker and more coffee-like in color. Overall efficiency of the freezing process is also increased allowing higher productivity rates.
